Huacatay. With this name of Quechua origin, the herb Tagetes minuta, from the Asteraceae family, is known in Peru. It can also be found by other names, such as epazote, smelly herb, sacred herb, black mint, and aymara wacataya. Its aroma is very penetrating, a mixture of mint, basil, lemon and tarragon. Those responsible for its perfume are tiny orange dots, located on the edges of the leaves, where its essential oils are concentrated.
In Peruvian gastronomy it is used as a condiment for the preparation of typical foods, such as pachamanca, ocopa and for decorations and to give aroma to meals.
